I love experimenting with healthier options of my favorite typically not-so-healthy foods. Any time something can taste good while still being healthy I’m all for it. I wasn’t feeling well today and was really craving chocolate chip cookies, so my sister made these for me. My sister and I have experimented with lots of different healthy chocolate chip cookie recipes over the years. This recipe is my sister’s favorite that she came up with after trying lots of different recipes. It’s more of a cake like consistency, so this is the perfect cookie for someone who loves soft cookies with a slightly cake consistency. Bassam, my sister, and me all really love this cookie. My dad prefers a crispier cookie, so he doesn’t love it, but he still can’t have just one, haha.
Healthy Chocolate Chip Cookies – Vegan and Paleo
These cookies are super light and fluffy with a slight cake like texture. We added collagen powder to them to sneak in a bit of protein, but you can omit it if you don’t want it. They don’t have any oil or butter which cuts down the fat content and gives them the light and fluffy feel. The maple syrup replaces sugar and is a bit less than what I’ve seen other healthy cookie recipes call for. You can add in any other mix ins you like to customize them like dried fruit, nuts, or maybe even peppermint pieces around the holidays. Consider this recipe your base and then go ahead and get creative with it!
Gather This:
- 2 cups almond flour
- 1/4 cup maple syrup
- 1/2 tsp baking soda
- 1 tsp baking powder
- 2 eggs
- 2 tsps vanilla extract
- 5 scoops of collagen powder {optional to add protein. I like this Further Food collagen. You can get 10% off here}
- 3 tbsps – 1 cup of chocolate chips {we don’t like a lot of chocolate chips so we go with 3 tbsps, but if you like more, I suggest 1 cup. These chocolate chips are dairy free}
- pinch of salt
Do this:
- Preheat the oven to 350 degrees
- Combine the dry ingredients in a medium sized bowl
- Whisk together the wet ingredients in a small bowl
- Add the wet ingredients to the dry and mix
- Spoon 1o almost rounded scoops of batter to a parchment lined baking tray
- Bake for 10 minutes on 350 degrees
- Yum! Enjoy without any guilt!

Ingredients

- pinch of salt
Instructions

Pre heat oven to 350 degrees
